I’m allergic to gluten so I’m always looking for wheat free dinners that my family will actually eat. Gnocchi is a good alternative to pasta for me, since it’s made from potato flour and contains very little wheat. This recipe is easy to throw together, quick to prepare and vegetarian as well.
Asparagus Gnocchi
1/2 an onion, chopped
1 cluster of asparagus, chopped
olive oil or butter (I use olive oil because it’s plant-based, and I use lemon infused olive oil because it gives the veggies a great taste)
1 package of gnocchi
shredded parmesan or mozzarella
Cook gnocchi according to directions on package and set aside. Saute the asparagus and onion in olive oil until asparagus is tender and onions are translucent. Mix gnocchi with the vegetables and sprinkle parmesan on top. That’s it! Done!
You could add meat if you want, or you could make it vegan by using soy cheese.
